This is one of those dishes that is filling. we had toast and coffee with this for dinner.

Ingredients For ugg oh leeeeee~~~ potatoes “ha ha ha”

1 tablespoon unsalted butter “ you may need to add a wee bit more” depending on how much is soaked up with the potatoes and garlic.

3 medium potatoes “skin on “baked for about 20 minutes in a 325 oven

3 large cloves garlic
-
¼ of a orange pepper chopped
-
7 slices of tomatoes
-
1 teaspoon kosher or sea salt
-
1 tablespoon fresh ground pepper
-
3 tablespoons grated cheese “what ever blend you like”
How To Make ugg oh leeeeee~~~ potatoes “ha ha ha”

1Melt the butter and with a rasp grate the garlic and start to cook it.

2Let the garlic cook slow, and stir it often. Cut the cooled potatoes into small cubes and add to the garlic and butter.

3Let this cook till the potatoes start to brown on the bottom. Don’t mess with the potatoes just let them do their thing.

4Once they are browned turn them over and top with the peppers.

5Let them brown and turn them again and top with the tomatoes. Put the salt and pepper on top.

6Cook for about 8 minutes and cover with the cheese.

7Turn the heat way down, and put a cover on to let the cheese melt.

8And then enjoy :-)
