Ingredients For twice baked sweet potatoes with walnut streusel

  • 3 lg
    sweet potatoes scrubbed clean
  • 4 Tbsp
    brown sugar
  • 3 Tbsp
    butter melted
  • 1/2 tsp
    each salt and cinnamon
  • STREUSEL TOPPING
  • 3 Tbsp
    flour
  • 1/2 tsp
    cinnamon
  • 1/4 c
    chopped walnuts
  • 2 Tbsp
    melted butter
  • 3 Tbsp
    brown sugar

How To Make twice baked sweet potatoes with walnut streusel

    Prick the sweet potatoes with a fork and place in a preheated 350 degree oven. Bake for 45 minutes. Remove the sweet potato and set aside to cool a bit. Cut the sweet potatoes in half and scoop out the insides keeping the skins intact.

    Place the skins on a baking sheet. Mash the sweet potato with the brown sugar, butter, salt and cinnamon. Place back into the skins.

    Mix the ingredients for topping together. Sprinkle on top of each sweet potato half. Bake another 25 minutes.
