Do you love sweet potatoes like I do? Well this recipe will make a believer out of you if you aren't sure. I don't often add the pineapple, but it is up to you if you do!

Ingredients For twice baked sweet potatoes

6 lgsweet potatoes, baked

1/2 tspcinnamon

1/4 cbutter, melted

1/2 tspsalt

1/4 tspnutmeg

3 cmini marshmallows
-
1 cchopped walnuts or pecans

8 ozcrushed pineapple, optional
How To Make twice baked sweet potatoes

1Oven to 350 degrees. Cut each potato in half lengthwise and scoop out all but 1/8" from edge. Mix with 2 T butter, cinnamon, salt and nutmeg until smooth. Stir in 2 c marshmallows, pineapple, and 1/2 c walnuts. Spoon into shells. Toss remaining ingredients and sprinkle on top of potatoes. Bake 20 min and serve hot.
