twice baked potatoes

I made these 1 time and my family went nuts over them, I served crab cakes with them... I hope you all enjoy....

Ingredients For twice baked potatoes

1 cchopped green onions

2 csharp cheddar cheese...shredded

2 cor a bag of shrmp/ raw/

1 csour cream

1 stickbutter
-
4 Tbspbacon bits
-
4big baking potatoes/ large
-
2 tspany cajun spice
-
2 Tbspolive oil
How To Make twice baked potatoes

1Bake potatoes at 400 degrees for 1 hr., or until they are tender inside, (poke with a fork in the center of the potatoes) it should be tender.

2Wash shrimp,,. put shrimp into a bowl of cold water and peel them, in a separate bowl put the peeled shrimp in, cut shrimp in half. cook with a dash of olive oil in a frying pan, and add Cajun spice the amount is up to you...and the kind you prefer. Until all the shrimp, are a pink tilt. add the bacon bits, cook together for 5 mins. Chop your green onion up, while wait on the potatoes to cook.

3After potatoes are done, (turn your oven to 450 degrees). Take out, cut a long rectangle in the potatoes so you can scoop out ALL the meat of the potato, using a spoon, put into a large bowl, add, butter cheese, sour cream, onions, and the shrimp and the bacon bits, salt and pepper to taste. Mix all together,put the potatoes skins on a cookie sheet.... then scoop the mixture back into the potatoes. you can over stuff the potatoes.Add a little cheese to top.

4Cook for 15 mins. 450*, Serve Hot, and Enjoy!!!
