All I can say is that it was a huge hit with my guys at the dinner table. I made it a couple of weeks ago and they are already requesting it again. The prep time seems like a lot but that is basically baking the potatoes and frying the bacon. This step can be done the day before.

Cheesy and full of bacon, this side dish casserole is amazing. It has all the flavors of a loaded potato, just in casserole form. You can serve this at a cookout alongside steaks and burgers. It would be delicious alongside baked chicken too. If you want a more buttery taste, use Yukon Gold potatoes.

Ingredients For twice baked potato casserole

7 mdred potatoes, baked

1/4 tspsalt

1/4 tspblack pepper

1 lbbacon, cooked and crumbled

3 csour cream
-
2 cmozzarella cheese, shredded

2 ccheddar cheese, shredded

3green onion, sliced
How To Make twice baked potato casserole

1Cut baked potatoes into 1-inch cubes.

2Grease a 13 x 9 baking dish.

3Place half the potatoes in a greased baking dish.

4Sprinkle with half the salt, pepper, and bacon. Top with half the sour cream.

5Then top with half of the mozzarella and cheddar cheeses. Repeat the layers - salt, pepper, bacon, sour cream and cheese.

6Bake uncovered at 350° for 20-25 minutes or until cheeses are melted.

7Sprinkle with the sliced green onion.
