Ingredients For twice baked potato

potatoes

shredded cheese
-
sour cream and chives (optional)

olive oil, extra virgin (optional)

salt and pepper to taste (optional)
How To Make twice baked potato

1preheat oven to 400
-
2in a bowl mix a small amount of olive oil and add seasoning. place potatoes in bowl and roll to coat with oil. (sometimes I just pour some oil in my hands then rub it on the potatoes and then sprinkle with salt and pepper)

3Bake the potatoes until they are almost done

4let cool slightly then cut the potatoes "Hotdog style" scrape out the inside making a "canoe"

5mash all of the scooped out potatoes then place back into the potato. top with as much cheese as you want. Bake until the cheese melts

6top with sour cream and chives if youd like
