I hadn't thought of these in years until recently when I overheard some ladies at a pitch-in mention them. Oh, what yummy memories! My mother was the Potato Queen. I am attempting to make them as she did. The added eggs were her little secret. 07-20-2017

3 lbpotatoes, peeled and halved

1 lgyellow onion, chopped or sliced

1/3 cextra virgin olive oil

salt and pepper to taste

2 lgeggs
How To Make thelma's homefries "plus"

1Bring large pot of water to a boil and add potatoes. Cover and cook until almost done, about 10-12 minutes.

2Take potatoes off the heat and immerse them in cold water until cool enough to handle.

3Slice potatoes and lay them on paper towels to drain thoroughly.

4Place oil in a large skillet over medium heat and add onions. When onions begin to appear translucent, add the potato slices.

5Cook over high heat, turning frequently to prevent burning. When they reach desired brownness, break two eggs into the mixture.

6Stir eggs into potatoes and onions, reducing heat, until eggs are cooked. Salt and pepper to taste.

7My mother often served these with sauerkraut on the side. Yummy goodness!
