This was the last dish I made with all the PEAS I bought. LOL Yes I kind of went over board in buying peas. But we had lots of yummy veggie healthy meals. This was a hit with Uncel.I plan to make this dish again but am onna buy a lot less peas next time LOL.

Ingredients For tatoes & peas with mint

1 lbred potatoes, small & halved

dashsalt & pepper

1 cpeas, shelled
-
1/2 lbsnap & snow peas, sliced crosswise

2 Tbspbutter, unsalted & room temperature
-
1/2 tsplemon zest, grated
-
2 tsplemon juice, fresh
-
2 Tbspmint, fresh & chopped
How To Make tatoes & peas with mint

11st in a medium pot over medium-high heat boil the potatoes in salted water for about 12 mins. Than add in the peas & cook until a bright green color & crisp about 2 mins.

2Than drain off the water. Transfer to large bowl & toss with the butter, lemon zest, jucie & mint. Season with the salt & pepper.

3Best served warm as a side dish.
