2 cleftover mashed potatoes

1egg
-
1/4 cflour
-
2 tspgrated onion, optional

1/4 ccanola oil (or oil of your choice)

salt and pepper
How To Make tater cakes

1Mix potatoes, egg, onion, salt & pepper. Shape into patties and dredge in flour. Heat the oil in a skillet. When hot, brown patties on both sides.
