Ingredients For sweet potato stacks with a kick

    sweet potatoes
  • 4 Tbsp
    uncle gary's pepper jelly (or your favorite spicy jelly)
  • 4 slice
    bacon
  • coarse sea salt and cracked black pepper

How To Make sweet potato stacks with a kick

    Place bacon on baking sheet or bakers rack and bake 375° for 25-30 min or till crispy. Once cool, crumble or chop into bacon bits.

    Peel potatoes and slice them VERY thin, I use a mandolin.

    Place in mixing bowl, add salt and pepper to taste. I used a healthy pinch of coarse sea salt and about 5 cranks of the pepper mill. Add 3/4 of the bacon bits, approx. 4 tbs. of your favorite spicy jelly and mix together using hands. Make sure you completely coat each slice of potato.

    Spray a 6 c muffin tin with spray oil. Start stacking together slices of potato in your hand until you have about a 2-3" stack. Run a toothpick down through the center to help keep potatoes in place.

    Place in muffin tin and drizzle remaining jelly/bacon bits over top. Bake 325° for 45 min. to 1 hr, until you can insert another toothpick into potatoes easily.
