6sweet potatoes

6ounces butter

1/2cup sugar

2teaspoons vanilla

1teaspoon orange extract
-
1teaspoon orange zest
-
4large eggs
-
1cup 2% milk
-
1teaspoon salt
-
1teaspoon pepper
-
1/2teaspoon nutmeg

1cup flour
-
1cup butter
-
1cup brown sugar
-
1/2cup sweetened coconut
-
1cup chopped pecans
How To Make bonnie's sweet potato souffle

1Butter a 13X9 inch baking dish.

2Bake the sweet potatoes on a cookie sheet on foil. Pierce the skins with a fork at least three times. Bake at 400 for about one hour.

3Cool for 10 minutes, then using a fork scrape the skin off the potatoes, cut them into chunks and put them in a large mixing bowl.

4Add the butter, sugar, vanilla, orange extract, orange zest, the eggs, beaten, milk, salt, pepper and the nutmeg to the sweet potatoes. Mix well with a hand mixer on low speed, then beat on high speed until well mixed. Pour the mixture into the baking dish.

5Pre-heat the oven to 350 degrees.

6MAKE TOPPING: Melt the butter and add the flour, brown sugar, coconut and pecans, mix well. It will be crumbly.

7Sprinkle the topping over the sweet potato mixture and bake at 350 degrees for 35 minutes.
