This is a very quick and simple potato salad to make for any special occasion. My son and I loved this potato salad, and I plan to make this again real soon in the future...A nice variation to the palate...I found this recipe in a cookbook called, "Potatoes" as well...

Ingredients For sweet potato salad

  • 2 1/4 c
    sweet potatoes, diced
  • 4 Tbsp
    butter
  • 1 Tbsp
    lemon juice
  • 1
    garlic clove
  • 1
    red bell pepper, seeded and diced
  • 1
    green bell pepper, seeded and diced
  • 2
    underripe bananas, thickly sliced,
  • 2
    thick slices of white bread, crusts removed, diced..or croutons
  • salt and pepper, to taste
  • DRESSING
  • 2 Tbsp
    honey
  • 2 Tbsp
    chopped chives
  • 2 Tbsp
    lemon juice
  • 2 Tbsp
    olive oil

How To Make sweet potato salad

    Boil the sweet potatoes for 10-15 minutes, until tender. Drain thoroughly and reserve.

    Meanwhile, melt the butter in a skillet and add the lemon juice, garlic, and bell peppers. Cook for around 3 minutes stirring constantly.

    Add the banana slices to the pan and cook for a minute. Remove the bananas from the pan with a slotted spoon and stir into the potatoes.

    Add the bread cubes to the skillet and cook, stirring for around 2 minutes, or until golden brown on all sides.

    Mix the dressing ingredients together in a small pan and heat until it is runny.

    Spoon the potato mixture into a serving dish, season to taste, and pour the dressing over the mixture along with the croutons. Serve immediately.
