These are a nutricious, delicious alternative to regular potato pancakes. Especially important that you use real maple syrup.

Ingredients For sweet potato pancakes w/ maple syrup

1-1/2 lbsweet potatoes, peeled, shredded

1 smonion, finely chopped

1 lgegg, beaten
-
1/2 cflour
-
1 tspbaking powder
-
1 tspsalt
-
1/2 tsppepper
-
canola oil, for frying

1/2 creal maple syrup
How To Make sweet potato pancakes w/ maple syrup

1In lg bowl, combine all ingredients, except for oil and syrup. Mix well.

2Form dough into 8 equal-sized pancakes. In lg deep skillet, heat about 1/4 cup oil over med-high heat.

3Place 1/2 of the pancakes in skillet. Fry about 3 mins each side, or until golden. Repeat w/ other pancakes, drain on paper towels. Serve w/ warm maple syrup.
