These are a nutricious, delicious alternative to regular potato pancakes. Especially important that you use real maple syrup.

Ingredients For sweet potato pancakes w/ maple syrup

  • 1-1/2 lb
    sweet potatoes, peeled, shredded
  • 1 sm
    onion, finely chopped
  • 1 lg
    egg, beaten
  • 1/2 c
    flour
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • canola oil, for frying
  • 1/2 c
    real maple syrup

How To Make sweet potato pancakes w/ maple syrup

    In lg bowl, combine all ingredients, except for oil and syrup. Mix well.

    Form dough into 8 equal-sized pancakes. In lg deep skillet, heat about 1/4 cup oil over med-high heat.

    Place 1/2 of the pancakes in skillet. Fry about 3 mins each side, or until golden. Repeat w/ other pancakes, drain on paper towels. Serve w/ warm maple syrup.
