These are so crunchy and delicious you will want to serve them as dessert and not as a side dish. These are also good as appetizers. This idea is from Allrecipes. Photo by Jodie and recipe idea by Harriet. I made these and they are delicious- my sweet tooth craving was satisfied!

Ingredients For sweet potato latkes

2 lgsweet potatoes, peeled and shredded

2 lgeggs, lightly beaten

1 Tbspbrown sugar

2 Tbspall purpose flour
-
2 tspground cloves
-
2 tspground cinnamon

2 Tbspvegetable oil for frying

2 Tbspbutter for frying
How To Make sweet potato latkes

1Place shredded potatoes in a cheesecloth and squeeze as much of the liquid from them as possible. Let set for 10 minutes then squeeze again.

2In a large bowl, combine all ingredients and mix well. Heat oil and butter in large heavy skillet to medium high heat(375^)

3Form mixture into pancake size patties and fry in heated pan. Turn over patties after 2 to 3 minutes-when bottom is browned; and brown on the other side. Drain on paper towels. Serve hot with applesauce or butter, maple syrup or whipped cream.
