These are so crunchy and delicious you will want to serve them as dessert and not as a side dish. These are also good as appetizers. This idea is from Allrecipes. Photo by Jodie and recipe idea by Harriet. I made these and they are delicious- my sweet tooth craving was satisfied!

Ingredients For sweet potato latkes

  • 2 lg
    sweet potatoes, peeled and shredded
  • 2 lg
    eggs, lightly beaten
  • 1 Tbsp
    brown sugar
  • 2 Tbsp
    all purpose flour
  • 2 tsp
    ground cloves
  • 2 tsp
    ground cinnamon
  • 2 Tbsp
    vegetable oil for frying
  • 2 Tbsp
    butter for frying

How To Make sweet potato latkes

    Place shredded potatoes in a cheesecloth and squeeze as much of the liquid from them as possible. Let set for 10 minutes then squeeze again.

    In a large bowl, combine all ingredients and mix well. Heat oil and butter in large heavy skillet to medium high heat(375^)

    Form mixture into pancake size patties and fry in heated pan. Turn over patties after 2 to 3 minutes-when bottom is browned; and brown on the other side. Drain on paper towels. Serve hot with applesauce or butter, maple syrup or whipped cream.
