My boys love this and not just for Thanksgiving. I make this all fall and winter long. They would rather have this than anything else. We love the taste of orange with my sweet potatoes and because I do not like to zest fruits I added marmalade. I am always looking for a shortcut. One of my boys does not like nuts but they could be added to the topping instead of coconut. The quantity of spices and marmalade depends on the size of the potatoes so taste as making.

This sweet potato casserole has a wonderful combination of flavors. Lightly sweet and fruity, it's the perfect holiday side. The filling has a fluffy and creamy texture. We loved the addition of orange marmalade and sweetened condensed milk. The marmalade is not an overpowering flavor and just adds a hint of citrus. On top is a buttery, crunchy, and sweet topping.

4sweet potatoes, cooked and peeled

1/3 csugar

1/3 cbutter

2eggs
-
1 tspvanilla

1/2 csweetened condensed milk

4 - 6 ozorange marmalade, sometimes even more

1 - 1 1/2 tspcinnamon, or more to taste

1/8 - 1/4 tsppumpkin pie spice
- TOPPING

1 ccoconut
-
1/3 call-purpose flour

1 cbrown sugar

1/3 cmelted butter

1Combine the first nine ingredients in a mixer and mix well.

2Pour into a 9 by 13 pan or a 9 by 7 by 2.5 pan.

3Combine the topping ingredients in a separate bowl.

4Sprinkle on top of the sweet potato mixture.

5Bake 350 degrees for 25-35 minutes

6Note: The amount of cinnamon, orange marmalade, and pumpkin pie spice may need to be adjusted to taste as all sweet potatoes are not the same size.
