Ingredients For sweet potato casserole
- STREUSEL TOPPING

1/4 cflour
-
1/2 clight brown sugar

1/3 cpecans, chopped

2 Tbspbutter, melted
- SWEET POTATO
-
3 ccooked and mashed sweet potatoes (about 2 pounds)

1egg
-
1/3 c1% milk
-
1/2 tspsalt
-
1/4 cmaple syrup, grade b
-
1 tspvanilla extract
-
2 Tbspbutter, melted

1 pkgfresh asparagus (small package)
How To Make sweet potato casserole

1Preheat oven to 350. Spray a 2 quart casserole dish with non-stick baking spray and set aside. Cook asparagus and set aside.

2Blend flour, brown sugar and pecans in a small bowl. Pour melted butter over the mixture and blend until moistened and crumbly. Set aside.

3In a large bowl, beat the egg, milk salt, maple syrup, vanilla extract and melted butter. Add the sweet potato to the egg mixture and blend well.

4Spread in casserole dish. Sprinkle topping over evenly. Garnish with pieces of cooked asparagus. Bake about 30 minutes or until lightly brown & heated.
