I make this for the Thanksgiving dinner but you can make it anytime. It tastes more like a dessert but I justify this as a side dish since it has sweet potatoes in it.

Oh so yummy, this sweet potato casserole is more like a dessert than side dish. The sweet potatoes are moist, soft, and just melt in your mouth. On top is a crumble made of coconut, chopped pecans, and brown sugar. It's sweet and crunchy. The flavor of the coconut and pecans pair nicely with the sweet potatoes. We liked the addition of coconut to this topping. It adds a bit of wow factor to this easy dish.

Ingredients For sweet potato casserole

3 ccold mashed sweet potatoes (yams out of can o.k. too)

1/2 csugar

1/4 cmilk
-
1 tspvanilla

1/3 stickmargarine, melted

2eggs
- TOPPING
-
1/2 ccoconut
-
1/2 cchopped pecans
-
1/3 stickmargarine, melted

1/3 cbrown sugar, packed

1 Tbspall-purpose flour
How To Make sweet potato casserole

1Mix sweet potatoes, sugar, milk, vanilla, melted margarine, and eggs together with an electric mixer. Grease a 9x9" pan (glass o.k. too).

2Mix topping ingredients (coconut, pecans, melted margarine, brown sugar, and flour) altogether.

3Pour sweet potatoes into the greased baking dish.

4Evenly sprinkle topping mixture over sweet potato mixture.

5Bake at 300 degrees for 45 minutes uncovered.
