Whipped this up with what I had in the pantry to use up Three sweet potatoes. This came out better than anticipated.

Ingredients For sweet potato bake with granola graham topping

  • 3
    baked or microwaved sweet potatoes
  • 1/2 -
    stick butter - melted (4 oz)
  • 2
    eggs - beaten
  • 2 Tbsp
    agava nectar (dark) - if you don't use agava, brown sugar would work.
  • 1/2 - tsp
    cinnamon
  • 1/4 - tsp
    nutmeg
  • 1/4 - tsp
    white pepper
  • Dash
    ginger and salt
  • TOPPING
  • 1 c
    granola cereal
  • 1
    graham cracker - crushed
  • 2 tsp
    butter - melted
  • Dash
    cinnamon and nutmeg
  • OPTIONS: IF YOU HAVE THEM, ADD PECANS OR WALNUTS TO THE TOPPING MIXTURE.

How To Make sweet potato bake with granola graham topping

    Preheat Oven to 375 degrees. In large bowl beat eggs - add: - scooped out baked sw. potatoes, and discard skins. - Agava Nectar - add spices

    Beat with mixer well, till smooth and fluffy. Pour into a 1- 1/2 quart buttered casserole dish. set aside.

    TOPPING: In small bowl: Mix all ingredients together. Spread on top casserole. Bake on middle rack at 375 deg. for about 25 minutes, till puffy and topping is lightly browned. Let sit a few minutes before serving.
