Ingredients For sweet potato rounds

  • SAVORY
  • 1-2 Tbsp
    olive oil
  • 1/2 tsp
    smoked paprika
  • 1 tsp
    mccormicks perfect pinch mexican seasoning
  • 1/2 tsp
    garlic salt
  • SWEET
  • 3 md
    sweet potatoes, peeled and thinly sliced rounds
  • 1-2 Tbsp
    olive oil
  • pinch each of nutmeg, thyme, black pepper
  • 1 tsp
    brown sugar
  • 1/2 c
    panko bread crumbs, opt

How To Make sweet potato rounds

  • 1
    Peel potatoes and slice into thin rounds. Place in a bowl, drizzle with olive oil and sprinkle with spices. Using hands, mix taters well making sure they are all coated. Then add 1/2 c of panko bread crumbs and toss.

    Lightly grease med. size cookie sheet with olive oil. Place potatoes into layers on sheet. Drizzle with a little olive oil and bake 400°° for 30 min. on upper middle rack to prevent burning.
