Ingredients For sweet potato rounds

1-2 Tbspolive oil

1/2 tspsmoked paprika

1 tspmccormicks perfect pinch mexican seasoning

1/2 tspgarlic salt

3 mdsweet potatoes, peeled and thinly sliced rounds

1-2 Tbspolive oil

pinch each of nutmeg, thyme, black pepper

1 tspbrown sugar

1/2 cpanko bread crumbs, opt
How To Make sweet potato rounds

1Peel potatoes and slice into thin rounds. Place in a bowl, drizzle with olive oil and sprinkle with spices. Using hands, mix taters well making sure they are all coated. Then add 1/2 c of panko bread crumbs and toss.

2Lightly grease med. size cookie sheet with olive oil. Place potatoes into layers on sheet. Drizzle with a little olive oil and bake 400°° for 30 min. on upper middle rack to prevent burning.
