My family loves potatoes with breakfast dishes. This is a basic fried potato dish that has endless possibilities. Just add whatever sounds good and whatever you happen to have on hand.

    baking potatoes, cooked, cubed
  • 2 Tbsp
    canola oil
  • 1/2 Tbsp
    parmesan cheese, optional
  • 2 tsp
    italian seasoning, optional

How To Make super simple fried breakfast potatoes

    In a medium skillet, heat oil over medium heat..

    Add cubed potatoes to the skillet in an even layer. Pan fry in the oil for a few minutes or until the potatoes start to brown. Stir occasionally to brown each side.

    NOTE: Depending what I'm serving these with, I add onions, peppers, cheese, seasonings etc.
