1In a medium skillet, heat oil over medium heat..

2Add cubed potatoes to the skillet in an even layer. Pan fry in the oil for a few minutes or until the potatoes start to brown. Stir occasionally to brown each side.

3NOTE: Depending what I'm serving these with, I add onions, peppers, cheese, seasonings etc.
