Ingredients For special occasion baked mashed potatoes

  • 4 lb
    potatoes, baked then mashed
  • 1 1/2 c
    minced shallots
  • 3 c
    shredded white cheddar, divided
  • 3 c
    sour cream
  • 1 Tbsp
    salt (more or less to taste)
  • 1/4 tsp
    ground white pepper

We baked our potatoes at 400 degrees F for 45 minutes - 1 hour until fork tender. We let them cool, peeled the skin off, and then mashed.
  • Potatoes, shallots, cheese, salt, pepper, and sour cream in a bowl.

    Preheat oven to 350 degrees F. In a large bowl, mix the potatoes, shallots, and most of the cheese until well combined. Reserve enough cheese to sprinkle on top of the potatoes. Season with salt and pepper. Fold in the sour cream one cup at a time.
  • Potato mixture poured into a baking dish with cheese sprinkled on top.

    Oil a large baking dish (13 X 9 or larger pan will do) very well. Place the potato mixture in the pan and sprinkle the top with the reserved cheddar cheese.
  • Potatoes baking until light golden brown.

    Bake for 25 minutes until hot and lightly browned.
