4 lbpotatoes, baked then mashed

1 1/2 cminced shallots

3 cshredded white cheddar, divided

3 csour cream

1 Tbspsalt (more or less to taste)

Test Kitchen Tips
We baked our potatoes at 400 degrees F for 45 minutes - 1 hour until fork tender. We let them cool, peeled the skin off, and then mashed.

1Preheat oven to 350 degrees F. In a large bowl, mix the potatoes, shallots, and most of the cheese until well combined. Reserve enough cheese to sprinkle on top of the potatoes. Season with salt and pepper. Fold in the sour cream one cup at a time.

2Oil a large baking dish (13 X 9 or larger pan will do) very well. Place the potato mixture in the pan and sprinkle the top with the reserved cheddar cheese.

3Bake for 25 minutes until hot and lightly browned.
