I love trying to incorporate sweet potatoes in my diet because they have so many health benefits. They help save your eyesight, lift your mood, combat cancer and strengthen bones. Benefits aside, they're also very delicious in this simple, quick, oven-baked recipe inspired by Country Living magazine.

Ingredients For southwestern oven fried sweet potatoes

    medium size sweet potatoes
  • 1/2 tsp
    kosher salt
  • 1/2 tsp
    ground chili powder
  • 1/2 tsp
    ground cumin
  • 1/4 tsp
    ground cayenne pepper
  • 1 Tbsp
    canola oil

How To Make southwestern oven fried sweet potatoes

    Pre heat oven to 400 degrees. Partially peel the potatoes. I like to get rid of the hairy, unappetizing parts of the skin and leave the rest on.

    Cut each potato in half lenghthwise, and cut each half into 6 wedges. In large bowl, combine the cut potatoes, oil and spice mixture. Toss until potatoes are evenly coated. (I use my hands and get messy)

    On foil lined baking sheet (easy clean up) arrange potatoes in single layer and place in middle rack of pre-heated oven. Bake 30 minutes or until edges are crisp and potatoes are cooked through. Serve with guacamole or your favorite dip.
