4-6russet potatoes

1/2 cgrated cheddar cheese

1 Tbspcilantro, fresh chopped

**mrs. dash extra spicy seasoning

How To Make southern style pan fried potatoes

1You can make as much or little of this dish as needed. I'm feeding four guys, so I used 4 med russet potatoes.

2Peel (or wash skin and dry)and cut into size you like, I cut these into fairly large pcs. Place in a bowl and drizzle with a little olive oil to coat.

3Cook in cast iron or heavy duty skillet over med low heat to start, about 20 min to get some browning. Stir every few minutes, scraping bottom of skillet. Add spices, turn down heat to low, cover and cook another 20-30 min stirring often until potatoes are tender.

4Remove from heat. Throw on some grated cheese and chopped cilantro and place lid on long enough for cheese to melt.
