This is another "copycat" recipe from the cooks at Sterlington Hospital when I worked there. This was a sure way to get all of us to break our diets.

Ingredients For sour cream potato casserole

  • 8
    red potatoes
  • 1 stick
    margarine
  • 4 oz
    pimento peppers, drained
  • 8 oz
    sour cream
  • 8 oz
    cheddar cheese, shredded

How To Make sour cream potato casserole

  • 1
    Peel the potatoes and slice them thinly. Parboil them. Drain.
  • 2
    Layer in a casserole dish in the order listed above. Make two layers.
  • 3
    Make sure the cheese is on the top layer. Bake in 325 degree oven for one hour.
