These are so yummy. I think I got the idea from a Rachel Ray episode. They are pictures on a fried chicken plate. Add any yummies you love on a baked potato.

Ingredients For smashed potatoes

1/3 csour cream

How To Make smashed potatoes

16-8 Potatoes- Any Kind Will Do. It Is Up To You If You Peel Them or Not. Wash & Cut Potatoes Into Chunks. Put Into a Microwaveable Dish With Enough Water To Barely Cover. Cook, for 25 minutes or until fork tender. ***OR*** Boil On The Stovetop Until Fork Tender. Pour Off The Water.

2These Measurements Are Rough. Add More or Less To Your Liking. Add About 1/2 Stick of Butter, 1/3c sour cream salt and pepper to taste.

3Take 2 Butter Knives & 'cut' The Potatoes or An Old Fashioned Potato Masher & Mash Them Until The Are Sort of Mashed & Sort of Chunks.

4Add any thing you like such as cheese, bacon, scallions, chives.
