My mother in law made these for the holidays so that she had the oven free for the main dish...they were amazingly good. I am thinking that adding garlic to make garlic mashed, or bacon and cheese would make wonderful loaded mashed!

Ingredients For slow cooker mashed potatoes, sandy's

  • 5 lb
    medium russet potatoes, peeled and cut into 1" chunks
  • 1 c
    sour cream
  • 12 Tbsp
    unsalted butter, cut into 1/2" cubes
  • kosher salt and fresh ground black pepper
  • 1 1/2-2 c
    milk, warm

How To Make slow cooker mashed potatoes, sandy's

    Toss potatoes, butter, 1 T salt and 1/2 t pepper in 6 qt crockpot. Add 1 c water (or chicken broth), cover and cook on high about 4 hours, until potatoes are tender (potatoes may have burned lightly in spots but that is ok). Remove lid, add sour cream and 1 1/2 c warm milk. Mash until mostly smooth. If they need thinned out, stir in remaining milk. Season to taste.

    Add in Ideas: 1. add garlic 1/2 way through cooking (the minced version) 2. add minced green onions at end of cooking and heat through (sour cream and onion mashed) 3. add a bag of cooked bacon (like in salad section, the soft kind) and cheese at the end of cooking and heat through, or top individual servings.
