Ingredients For skillet baked italian potatoes

1/2 lbground italian sausage, any flavor

1 mdonion, finely chopped

1 lbred potatoes,sliced thin, about 5 or 6

1/2 cvegetable stock

1 1/2 tsproasted garlic and herb seasoning

1/2 tspeach black pepper and oregano

1 ctomato sauce
-
1 cshredded mozzarella cheese
How To Make skillet baked italian potatoes

1Heat oven to 400^ Heat a large Cast Iron skillet then add the sausage; cook and scramble until brown. Remove sausage with a slotted spoon to paper towel lined plate to drain; set aside. To the same skillet add the onion and cook until soft. Add the potatoes. Cook and stir gently about 2 to 3 minutes.

2Mix the vegetable stock, seasoning, pepper, oregano, tomato sauce and sausage in a large bowl..Stir to combine. Pour this mixture over the potatoes in the skillet. Bring to a boil, then cover. Place in the pre-heated oven for 25 to 30 minutes .Until potatoes are tender.

3Uncover skillet and stir gently. Sprinkle with the cheese.. and return to oven. Bake 1 minute longer or until cheese is melted and potatoes are browned a little. Let cool 10 minutes before serving.
