side essentials: dill-flavored golden potatoes
This is an easy side dish to construct, and they come out of the oven with a wonderful hint of vinegar and dill. The only potato that I have tried with this recipe are the small golden variety; however, you might try other varieties and see what happens. After trying several different garnishes, I believe that simple is best. So, some freshly-grated Parmesan cheese; plus, a sprinkle of sea salt, and freshly ground black pepper are all that they require. So, you ready… Let’s get into the kitchen.

1 lbsmall golden potatoes, quartered

1 cwhite vinegar

1 cfiltered water
-
1 Tbspsalt, kosher variety

1 Tbspdill seed
-
1 Tbspolive oil, extra virgin variety

1 tspsesame oil
- OPTIONAL ITEMS

parmesan cheese, freshly grated, for garnish

sea salt, for seasoning

black pepper, freshly ground, for seasoning
How To Make side essentials: dill-flavored golden potatoes

1PREP/PREPARE

2Gather your Ingredients (mise en place).

3Place the quartered potatoes into a large mixing bowl.

4Add the water, vinegar salt, and dill seed to a saucepan, and bring to a boil. Or, you could put it into a heatproof measuring cup, and nuke it on high for 2 – 3 minutes.

5Pour the boiling liquid over the taters.

6Let them sit for 60 to 90 minutes.

7Drain and discard the liquid, but do not rinse.

8Chef’s Note: Some of the dill seeds will still be clinging to the taters… No worries.

9Return the taters to the bowl, and toss with the olive sesame oil, and a pinch or two of salt and pepper.

10Add them to the basket of your air fryer, or place them on a parchment-lined baking sheet.

11Set the air fryer to 400f (205c), and bake for 18 – 22 minutes, or until nicely browned.

12Chef’s Note: If you are using a conventional oven, set the rack to the middle position, use the same temperature, and increase the baking time by 4 – 5 minutes.

13PLATE/PRESENT

14Garnish with some freshly-grated parmesan, sprinkle with a bit of salt and pepper, and serve as a starch with your favorite protein, or simply eat them by themselves, with a nice cold chardonnay. Enjoy.
