How To Make side essentials: baked vinegar & salt fries
-
1PREP/PREPARE
-
2Gather your Ingredients (mise en place).
-
3Cut the potato into 1/4-inch (.6cm) matchsticks.
-
4Chef’s Note: If you have a mandolyn this is a great time to break it out.
-
5Chef’s Note: I tried several different sizes for these fries, and the size is very important to the temperature and timing of the baking.
-
6Add the water and vinegar to a pot, and bring up to a boil, then add the salt, and stir to combine.
-
7Add the fries, and allow to boil for 3 - 4 minutes.
-
8Place a rack in the middle position, and preheat the oven to 450f (230c).
-
9Remove from the water, drain on paper towels, and allow to dry out for about 10 minutes.
-
10Add the oil to a medium bowl, and season with some salt, and pepper. Then add the fries, and toss until coated.
-
11Place on a parchment-lined baking sheet, fitted with a wire rack.
-
12Place into the preheated oven for 15 – 18 minutes, or until beginning to brown.
-
13PLATE/PRESENT
-
14Add to a nice plate with some side sauces (like ketchup), and serve while still nice and warm. Enjoy
-
15Keep the faith, and keep cooking.
