I found this was a great twist on roasted potatoes. I often serve this with my vermouth chicken. I hope you enjoy this recipe. For those of you who have never used salted pork, it can be found in your grocery store in the meat section. It comes in little 4" blocks and tends to have a lot of fat, so pick out the one that has the most meat. Make sure when cutting it up that you discard most of the fat. You do want to keep some of the fat as this adds a lot of flavor.

These oven roasted potatoes are scrumptious. Easy to make, once roasted they're crispy and a lovely golden brown color. We love adding salt pork, garlic, and fresh rosemary for a nice punch of flavor. Very versatile, they can be served as a side dish for an easy grilled steak, baked chicken, roasted turkey, or prime rib.

Ingredients For scrumptious oven roasted potatoes

  • 2 lb
    Russet or Red potatoes
  • 4 Tbsp
    olive oil
  • 4 Tbsp
    butter, melted
  • 3 clove
    garlic, chopped
  • 1-2 sprig
    fresh rosemary
  • 1/4 lb
    salted pork
  • 1/2 tsp
    black pepper

How To Make scrumptious oven roasted potatoes

  • Cubed potatoes in a baking dish.

    Preheat oven to 375 F. Cube potatoes and put into a 3-quart (9x13 inch) casserole dish.
  • Combine olive oil and melted butter.

    In a cup, combine melted butter and olive oil.
  • Pour mixture over the potatoes and toss.

    Pour over potatoes. Toss the potatoes around so they all get coated with the butter mixture.
  • Bake for 25 minutes.

    Place in the oven for 25 minutes.
  • Chop garlic and rosemary and add to a bowl with black pepper.

    Meanwhile, chop garlic and rosemary. Place in a bowl along with the black pepper.
  • Chop salt pork. Toss with garlic and rosemary and add to the potatoes.

    Now cut salt pork into small cubes and mix with the garlic and rosemary. After the 25 minutes, take the dish out of the oven and mix in the herb/meat mixture.
  • Bake for another 25 minutes.

    Put back in the oven for another 25 minutes.
  • Cool slightly.

    When ready, remove from the oven and cool for a few minutes.
