Blue Ribbon Recipe

These creamy, cheesy au gratin potatoes cook to perfection. The sauce is thick, rich, and filled with cheese. Topping with a little more cheese takes this decadent side dish over the top. This recipe makes a smaller batch of potatoes, which is perfect if you're not serving a crowd. The recipe can easily be doubled for larger gatherings.

Ingredients For scalloped potatoes

  • 4 c
    thinly sliced potatoes
  • 3 Tbsp
    butter
  • 3 Tbsp
    all-purpose flour
  • 1 1/2 c
    milk
  • 1 tsp
    salt
  • 1 dash
    cayenne pepper
  • 1 1/2 c
    grated cheddar cheese, divided
  • paprika

We found that 4 medium potatoes equaled 4 cups of sliced potatoes.
  • Sliced potatoes in a measuring cup.

    Peel and slice 4 cups of potatoes.
  • Melted butter and flour in a pan.

    In a small saucepan, melt butter and blend in flour. Let sit for a minute.
  • Whisking in cold milk.

    Add all of the cold milk, stirring with a whisk.
  • Seasonings added to the sauce.

    Season with salt and cayenne.
  • Adding shredded cheese to the sauce.

    Cook sauce on low until smooth and boiling, stirring occasionally with a whisk. Reduce heat and stir in 1 cup of shredded cheese.
  • Half the sauce and potatoes added to a casserole dish.

    Place half of the sliced potatoes in a lightly greased 3 quart casserole dish. Pour half of the cheese sauce over the potatoes.
  • Layers repeated.

    Repeat the layers with the last of the potatoes.
  • Topping potatoes with remaining sauce.

    Top with the remaining cheese sauce.
  • Cheese and paprika sprinkled over the potatoes.

    Sprinkle the remaining 1/2 cup of cheese on top. Top with some paprika for color.
  • Baking the potatoes.

    Bake uncovered for about 50 - 55 minutes at 350 F.
