These creamy, cheesy au gratin potatoes cook to perfection. The sauce is thick, rich, and filled with cheese. Topping with a little more cheese takes this decadent side dish over the top. This recipe makes a smaller batch of potatoes, which is perfect if you're not serving a crowd. The recipe can easily be doubled for larger gatherings.

4 cthinly sliced potatoes

3 Tbspall-purpose flour

1 1/2 cmilk

1 tspsalt

1 dashcayenne pepper

1 1/2 cgrated cheddar cheese, divided

We found that 4 medium potatoes equaled 4 cups of sliced potatoes.

1Peel and slice 4 cups of potatoes.

2In a small saucepan, melt butter and blend in flour. Let sit for a minute.

3Add all of the cold milk, stirring with a whisk.

4Season with salt and cayenne.

5Cook sauce on low until smooth and boiling, stirring occasionally with a whisk. Reduce heat and stir in 1 cup of shredded cheese.

6Place half of the sliced potatoes in a lightly greased 3 quart casserole dish. Pour half of the cheese sauce over the potatoes.

7Repeat the layers with the last of the potatoes.

8Top with the remaining cheese sauce.

9Sprinkle the remaining 1/2 cup of cheese on top. Top with some paprika for color.

10Bake uncovered for about 50 - 55 minutes at 350 F.
