Ingredients For rotel potatoes

  • 5 or 6
    large red potatoes
  • 1
    bell pepper, diced
  • 1
    onion, diced
  • 1 stick
    butter
  • 1 lb
    velveeta cheese, cut up
  • 1 can
    rotel tomatoes

How To Make rotel potatoes

  • 1
    Cut potatoes into chunks, cook until tender, drain. place in a casserole dish and cover with sauce.

    Sauce; saute diced bell pepper and diced onion in butter. Add cheese and rotel tomatoes, stir until cheese is melted. Pour over potatoes and bake at 350 until bubbly.
