1Bake the potatoes until soft, about 45 mins at 350, let cool completely

2Gently fluff using 2 forks, add in sour cream, shredded cheddar, diced shallots salt & pepper...fluff again

3In a large bowl grate, no need to peel.

4Butter a dish and pour in bake at 350 for 30 mins
