A simple side dish from Meals Made Easy with Grey Poupon. We really enjoyed these, but the onions were over cooked by following the directions. Next time, I will add the onions about 1/2 way thru cooking.

Ingredients For roasted potatoes poupon

  • 1/2 c
    dijon mustard
  • 1/2 c
    olive oil
  • 3 lb
    baking potatoes, 1 1/2-inch cubes
  • 2 md
    onions, sliced
  • fresh parsley, chopped

How To Make roasted potatoes poupon

    In small bowl, combine mustard and oil.

    In large bowl, combine potatoes, onions, and mustard mixture; toss to coat well.

    Spread in 15 1/2 x 10 1/2 x 1 inch baking pan. Bake at 400F for 45-50 minutes or until potatoes are tender and crispy; stirring once.

    Garnish with parsley.
