These are so amazing. It seems like a lot of Parsley but actually it's not. You will be so surprised at how wonderful this taste! Enjoy!

Ingredients For roasted parsley & scallion red potatoes

6 lgred potatoes, diced into one inch pieces

3 lgscallions, diced to measure 1 cup

2 cparsley, chopped (about 1/2 lg bundle)

1/2 colive oil

6 Tbspbutter
How To Make roasted parsley & scallion red potatoes

1have 6 large red potatoes ready and washed

2Dice them up discarding any bruises to fill a coated 9x13 casserole dish. (I use the olive oil spray to coat my dish)

3Chop up your scallions to equal 1 cup

4chop up your parsley to equal 2 cups

5pour your olive oil over the potatoes, fold in your onions and parsley. I use my hands to make sure all the oil has coated everything.

6Bake at 350 until potatoes are tender, about half way through your baking stir up your mixture. After cooked add your butter on top and heat through.
