It sounds like a lot of oil but it's not. The wine mostly evaporates and soaks into the potatoes gives them great flavor. The outsides end up crispy.

Ingredients For red wine roasted fingerling potatoes

  • 2 lb
    fingerling potatoes
  • 1/2 c
    olive oil
  • 1/2 c
    dry red wine
  • sea salt
  • black pepper
  • ground coriander

How To Make red wine roasted fingerling potatoes

  • 1
    Preheat oven 375 degrees. Wash the potatoes and put slits in them. Add the potatoes to a baking pan.

    Pour the olive oil and red wine over the potatoes. Sprinkle with sea salt, pepper and ground coriander.

    Bake for 1 hour turning the potatoes every 15 minutes.
