Ingredients For red potatoes in mushroom sauce

2 lbred potatoes scrubbed and quartered

2 Tbspoil

salt and pepper

3 Tbspbutter

8 ozfresh mushrooms chopped

4 clovegarlic

2 tspfresh thyme leaves

1 Tbspmiso paste

1/4 cwhite wine
-
3/4 cheavy cream

1/2 cparmigiano reggiano grated

salt and pepper to taste
How To Make red potatoes in mushroom sauce

1Preheat oven 425 degrees. Line a baking sheet with foil. Toss the potatoes with oil salt and pepper. Roast in oven for about 20 minutes stirring occasionally.

2Meanwhile melt the butter in a saute pan and add the mushrooms let cook about 10 minutes. Add the garlic and miso paste. Cook for 1 minute add the white wine and let most evaporate. Add the heavy cream and cheese. Taste and adjust for salt and pepper. Sprinkle with the thyme.

3Serve over the potatoes
