Ingredients For red potato salad

2 lbwashed n unpeeled cubed( 1-1/2 inch) red skinned potatoes

5hard boiled eggs
-
1/2 lbbacon, chpd.

1 mdonion, finely chpd.

1stalk of celery, finely chpd.

1 1/2 cmayo (can add more if u like)

1 Tbspmustard
-
2 tspchopped chives

salt n pepper to taste
How To Make red potato salad

1IN A LARGE POT OF SALTED BOILING. WATER COOK POTATOES FOR 15 MINUTES UNTIL TENDER. DRAIN N SET ASIDE TO COOL A BIT THEN REFRIGERATE TO FINISH COOLING PROCESS

2IN SAUCEPAN COVER EGGS WITH COLD WATER N BRING TO A BOIL. COVER N REMOVE FROM HEAT LET SIT FOR 10 TO 15 MIN. REMOVE EGGS N PEEL N ROUGH CHOP EGGS.

3FRY OUT CHPD.BACON THEN DRAIN.

4REMOVE POTATOES FROM FRIDGE N ADD CHPD. EGGS, BACON, CELERY, ONION N CHIVES. IN A SMALL BOWL MIX MUSTARD WITH MAYO THEN POUR IN POTATO MIXTURE. SEASON WITH SALT N PEPPER. REFRIGERATE A FEW HOURS TO OVERNITE THEN......ENJOY:)
