My mother and her sisters used to make this dish quite often.My grandparents came from Croatia. My grown children love this dish.

Ingredients For purple potatoes

  • 2 lb
    red potatoes
  • 1 can
    beets
  • 1 md
    onion
  • olive oil, extra virgin
  • apple cider vinegar

How To Make purple potatoes

  • 1
    Boil potatoes with skins on. When tender let cool. Peel and slice as for frying.

    Drain beets and add to potatoes.
  • 3
    Dice onion and add. Season with salt and pepper. Add oil and vinegar to taste. Stir. Refrigerate. Enjoy!
