Ingredients For potatoes with spicy aioli

  • olive oil
  • 1/2
    red onion finely diced
  • 2 clove
    garlic minced
  • 1 Tbsp
    spoked paprika
  • 1 c
    mayonnaise
  • 1/4 tube
    each hot sauce and sherry vinegar
  • salt and pepper
  • 4
    russet potatoes peeled and cubed
  • fresh parsley to garnish

How To Make potatoes with spicy aioli

    To make the Aioli Add one tbsp olive oil to a saute pan and add the onion and garlic and cook about 5 minutes. Add the paprika and cook 30 seconds. Let cool.

    Place the onion mixture, mayo, hot sauce, sherry, salt and pepper in a food processor and process until smooth. Place in the refrigerator for 1/2 hour.

    Place the cubed potatoes in salted boiling water and cook 5 minutes. Drain and set aside on paper towel to dry.

    Place a baking sheet in the oven at 375 degrees.

    Fill a skillet about 2 inches deep with oil. Fry the potatoes until golden on all sides. Remove the baking sheet from the oven and arrange the potatoes in a single layer. Season with salt and pepper. Roast in oven about 10 minutes.

    Serve drizzled with aioli and garnish with parsley
