Ingredients For potatoes with spicy aioli

1/2red onion finely diced

2 clovegarlic minced

1 Tbspspoked paprika

1 cmayonnaise

1/4 tubeeach hot sauce and sherry vinegar

salt and pepper

4russet potatoes peeled and cubed

fresh parsley to garnish
How To Make potatoes with spicy aioli

1To make the Aioli Add one tbsp olive oil to a saute pan and add the onion and garlic and cook about 5 minutes. Add the paprika and cook 30 seconds. Let cool.

2Place the onion mixture, mayo, hot sauce, sherry, salt and pepper in a food processor and process until smooth. Place in the refrigerator for 1/2 hour.

3Place the cubed potatoes in salted boiling water and cook 5 minutes. Drain and set aside on paper towel to dry.

4Place a baking sheet in the oven at 375 degrees.

5Fill a skillet about 2 inches deep with oil. Fry the potatoes until golden on all sides. Remove the baking sheet from the oven and arrange the potatoes in a single layer. Season with salt and pepper. Roast in oven about 10 minutes.

6Serve drizzled with aioli and garnish with parsley
