I've had this recipe for about 25/30 yrs, I don't remember where I had copied it from, but it was something different and it is delicious.

Ingredients For potatoe stuffing

  • 3 - 5 lb
    potatoes diced
  • 1 lg
    onion diced
  • 1 lb
    bacon diced
  • 1 sm jar
    green olives stuffed w/pimento
  • 1/2 tsp
    oregano, dried
  • 1 tsp
    basil, dried
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper

How To Make potatoe stuffing

  • 1
    dice potatoes, bacon, onions and slice olives.
  • 2
    in a large skillet, heat olive oil, add potatoes, bacon, onion, olives and cook for a bit.

    Add oregano, basil, salt & pepper. continue to cook until potatoes start to brown.Set aside to cool.

    You can stuff a chicken or turkey or pig with this stuffing, it goes very well with either.
