    potatoe peeled and graded
  • 1 lg
    egg
  • 1/3 c
    flour
  • 1 md
    summer squash grade just the yellow
  • 1 md
    zucchini grade just the green
  • 1 lg
    onion mined
  • 2 Tbsp
    butter melted
  • 5 md
    scallions chopped
  • 1 bunch
    parsley chopped fine

How To Make potato vegetable pancakes

    Mix all ingredients in a bowl.

    Use a 3 ounce ice cream scoop to portion each potato pancake and cook on each side untl done.

    Serve with sour cream and apple sauce.
