Found this recipe in a cookbook called "Serving with Faith" which was a gift to me years ago. The book has recipes/menues from many individuals serving Greer Community Ministries and its senior citizens in Greenville County SC. I will share from time to time the many good recipes.

2 mdpotatoes, peeled and diced

1 candelmonte mixed vegetables, drained

1 mdonion, chopped fine

2 mdapples, red delicious, pelled and diced

2 Tbspsweet salad cube pickles

2 Tbspvinegar

1/2 cmayonnaise
How To Make potato salad with a crunch

1Cook and drain potatoes. Mix with vegetables, onion, apples and salad cubes. Mix vinegar and mayonnaise together. Toss with potato mixture. Serve on lettuce.
