My father used to make these potatoes for Easter. They're so yummy!

Ingredients For potato salad w/ bacon, egg and dill

2 lbunpeeled red potatoes

3chopped green onions

1/2 lbbacon, cooked, crumbled

1green bell pepper, diced

1 lghard-boiled egg, chopped

1/2 clight sour cream
-
1/4 cfat-free milk
-
3 Tbspchopped fresh dill

1 Tbsplemon juice
-
2 tspdijon mustard

1/2 tspsalt
How To Make potato salad w/ bacon, egg and dill

1Slice potatoes into 1/4"-thick slices. Place potato slices in lg saucepan and cover w/ water. Bring to a boil. Cover, reduce heat and simmer 15 mins. Drain, cool.

2In lg bowl, combine potatoes, green onions, bacon, green bell pepper, and egg. Toss gently. In another bowl, whisk together sour cream, milk, dill, lemon juice, mustard and salt.

3Pour dressing over potato mix. Toss gently to coat. Cover and chill until ready to serve.
