My father used to make these potatoes for Easter. They're so yummy!

Ingredients For potato salad w/ bacon, egg and dill

  • 2 lb
    unpeeled red potatoes
  • 3
    chopped green onions
  • 1/2 lb
    bacon, cooked, crumbled
  • 1
    green bell pepper, diced
  • 1 lg
    hard-boiled egg, chopped
  • 1/2 c
    light sour cream
  • 1/4 c
    fat-free milk
  • 3 Tbsp
    chopped fresh dill
  • 1 Tbsp
    lemon juice
  • 2 tsp
    dijon mustard
  • 1/2 tsp
    salt

How To Make potato salad w/ bacon, egg and dill

    Slice potatoes into 1/4"-thick slices. Place potato slices in lg saucepan and cover w/ water. Bring to a boil. Cover, reduce heat and simmer 15 mins. Drain, cool.

    In lg bowl, combine potatoes, green onions, bacon, green bell pepper, and egg. Toss gently. In another bowl, whisk together sour cream, milk, dill, lemon juice, mustard and salt.

    Pour dressing over potato mix. Toss gently to coat. Cover and chill until ready to serve.
