This is one of the best potato salads. It's always my go to recipe, when asked to make for parties. It has an egg based, cooked dressing...so delicious. Enjoy!

Ingredients For potato salad - my favorite

2eggs

1/2 csugar
-
1/4 cwhite wine vinegar

1 - 1 1/2 cmayonnaise

1 Tbspyellow mustard

1 tspsalt

pepper to taste

2 - 2 1/2 lbred skinned potatoes - or white, peeled, cut in half

2 ccelery, thinly sliced

1/2 cred onion, chopped

5 - 6hard cooked eggs, cut into wedges, or chopped

1/2 cgreen onions - sliced
-
1/2 cdiced red pepper ( optional )
-
pickles, minced ( optional )
How To Make potato salad - my favorite

1Dressing: Whisk eggs in small saucepan. Whisk in vinegar and 2 tablespoons water. Bring to boil over medium high heat. Boil for 3-4 minutes or until thickened, stirring constantly. Pour into medium bowl, whisk in mayonnaise, mustard, salt and pepper. Cover and refrigerate until well chilled.

2Cook potatoes in large pot of boiling water for about 20 minutes or until just tender. Drain and cool. Cut into 1 inch pieces. In large serving bowl,( I use my trifle bowl ) gently toss potatoes,pickles if using, celery, red onion, eggs, peppers if using, green onions with the dressing. You can garnish with some extra green onions. Chill until serving.

3I sometimes add about 1/2 tsp of prepared horse radish also..gives it a bit of zing... Double the dressing recipe for a larger crowd. I usually make a 5 pound bag of potatoes when making this. Enjoy!
