Pizza for breakfast? I love potatoes in every shape, color and form. This pizza is no exception. It is a very non-traditional pizza but potato lovers will thank you for it.

Ingredients For potato pizza for breakfast

3 lgpotatoes, peeled and cubed

1tube pizza refrigerated dough or pizza dough or your choice

1/4 cmilk

1/2 tspkosher salt

1 lbbacon, diced

1 lgonion, chopped
-
1/2 cred bell pepper, chopped

1 1/2 cmozzarella cheese
-
1 1/2 cmonterey jack cheese
-
4 lgeggs
-
1/4 cfreshly parsley, chopped
-
sour cream for topping, optional
How To Make potato pizza for breakfast

1Place potatoes in a saucepan and cover with water. Bring to a boil and cook for 20 minutes or til tender. Meanwhile, unroll the pizza crust onto an ungreased (14 inch) pizza pan; flatten dough and build up edges slightly. Prick dough several times with a fork. Bake 350° for 15 minutes or til lightly browned. Cool on a wire rack.

2Drain potatoes and transfer to a mixing bowl. Mash with milk and salt until smooth. Spread over crust. In a skillet, partially cook the bacon. Add onion and red pepper; cook til bacon is crisp and vegetables are tender.

3Drain well; sprinkle over potatoes. Top with cheeses, leaving a divot for each egg. Place an egg in each divot. Bake 500° for 8 minutes or until is cooked to your liking. Sprinkle with parsley and serve with sour cream if desired.
