Ingredients For potato pie

3medium potatoes, cut into chunks

1/2 ccream

2 Tbspbutter

1 tspsalt

tspblack pepper

1 Tbspvegetable oil

1onion, diced
-
1head broccoli, cut into florets
-
1green peppers, diced
-
4medium carrots, diced
-
1 cfrozen peas
-
1 ctomatoes, chopped

1/2 tspbasil
-
1/2 tspsalt

1bunch collard or kale, chopped

1/2 tsppaprika
How To Make potato pie

1Steam or boil potatoes until soft.

2Mash, cream, butter, salt and pepper. Set aside.

3Saute onion in oil for a few minutes.

4Add broccoli, pepper, carrots, peas, tomatoes, basil and salt. Bring to a boil. Cover. Simmer until vegetables are tender, about 15 minutes.

5Add collards or kale and cook for another 5 minutes.

6Put vegetables into a medium baking dish.

7Top with mashed potatoes and sprinkle with paprika. Bake at 350 degrees for 10 or 15 minutes and serve.
