Another great Potato Pancake I created this morning. Great for breakfast, lunch or dinner.

Ingredients For ~ potato pancakes ~ cassies

  • 1 1/2 lb
    russet potatoes, peeled, shredded and placed in cold water
  • 3
    green onions, sliced
  • 2
    eggs
  • 1/2 c
    milk
  • 3 - 4 Tbsp
    flour
  • salt
    & pepper to taste
  • oil
    for frying

How To Make ~ potato pancakes ~ cassies

    In a medium bowl, beat eggs, add milk and whisk in flour. Add seasoning and onions. Place potatoes in tea towel and wring out as mush water as possible. Stir potatoes into egg mixture.

    In a cast iron skillet, heat enough oil to lightly cover bottom of skillet. Hot but not smoking.

    Drop 1/4 cupfuls of potato mixture into the hot oil and cook 2 - 3 minutes on each side, or to desired crispiness. Drain on paper towel. Immediately season if preferred.
