Mom used to make these often. They are great with apple sauce and sour cream. Good for an easy breakfast or a side dish for a roast. For those who aren't restricted in diet or by religious laws you can add a bit of bacon grease to the oil, or bacon to mix.

Ingredients For potato latkes (pancakes)

    egg
  • 1 sm
    onion cut in quarters
  • 2 Tbsp
    flour
  • 1/2 tsp
    salt
  • 1 dash
    peper
  • 1 c
    vegatable or olive oil
  • 3 md
    peeled potatoes, cubed

How To Make potato latkes (pancakes)

    In blender with metal blades, add first 5 ingredients, mix until smooth.

    Add potatoes and mix till fairly smooth.

    In large skillet, heat oil until almost smoking. Drop into oil 1/3 cup full of mix & gently flatten each mound into a 4 inch circle. Cook until golden brown, turning when necessary.
