I love ethnic foods and kugel is one of my favorites. It's a Jewish casserole dish. There's also a noodle kugel which is very good. There are so many variations to these dishes. Feel free to add veggies, if you like... carrots, zucchini, etc.

Ingredients For potato kugel

4 Tbspall-purpose flour

1 Tbsp(heaping) salt

8 mdRusset potatoes, peeled

How To Make potato kugel

1Preheat oven to 400 degrees F. Grease a 9 x 13-inch baking dish.

2In a large bowl, mix eggs, oil, flour, salt, and pepper. Set aside.

3Coarsely grate the potatoes and onion by hand or with a food processor. Let stand for 3-5 minutes. Squeeze out the excess liquid.

4Add the potatoes and onion to the egg mixture. Mix by hand.

5Pour mixture into the greased baking dish. Spread the mixture as evenly as possible.

6Bake, uncovered, for 1 hour or until golden brown on top and a knife inserted in the middle comes out clean.
